Summary

Cooling and refreshing with a little crispy bite — that’s what makes this condiment (or a snack all by itself!) a very special treat, especially during hot summer months. Enjoy it on top of plant-based burgers, in wraps or as a grain bowl sauce.

Ingredients

Cashew Cream
 1 cup cashews (raw, soaked for at least 4 hours and drained. Alternatively, add boiling hot water to raw cashews and let soak for 30 minutes)
 ½ lemon (juiced)
 1 ½ tbsp organic apple cider vinegar
 ¼ tsp salt (optional)
 ½ cup water
Raita
 1 cucumber (peeled and grated)
 1 tbsp white onion (grated)
 ¼ cup cilantro (chopped)
 1 tbsp mint (minced)
 2 tsp jalapeño (optional, chopped)
 1 tsp ground cumin
 ¼ tsp salt (optional)
 ¼ tsp pepper (optional)

Directions

Make the sour cream: Add the soaked and drained cashews, lemon, apple cider vinegar, salt, and water to a food processor or blender.

Blend until smooth.

Pour sour cream into a medium bowl.

Add the raita ingredients: grated cucumber, grated onion, cilantro, mint, jalapeno, cumin, salt, and pepper (if using).

Stir well.

Serve with chopped cucumber, additional mint or cilantro, and a dash of chili powder or smoked paprika, if desired.

Chef's Notes

Substitutions
Instead of cilantro use extra mint or replace the cilantro with parsley.

In place of white onion use shallots or yellow onion.
